Why filters matter
Baffle filters force grease-laden air to change direction so grease drops out. Clogged filters stop doing that job and let grease pass into the duct.
A simple routine
Many busy kitchens wash filters weekly, and some daily. Follow the filter manufacturer's guidance.
- Soak in hot water with degreaser
- Scrub and rinse, or run through a dish machine if approved
- Dry and reinstall with baffles oriented correctly
- Replace bent or damaged filters
- Never cook with filters missing
Final tips
Rotate a spare set of filters so a clean set is always ready while the dirty set soaks.
Replace filters that are bent or warped, since gaps let grease bypass the filter and coat the plenum.
