Hendersonville sits along Old Hickory Lake, and its restaurant corridors on Main Street and near Indian Lake Village serve a large suburban population north of Nashville. Many kitchens here are franchise and family restaurants with steady fryer and grill volume.
Because Hendersonville is close to Nashville, scheduling overnight cleanings here fits easily into routes serving Sumner and Davidson counties.
Baffle filters are the first barrier between cooking grease and the rest of the exhaust system. They are designed to change the direction of airflow so grease drops out and drains to the trough. Once the baffles are packed with grease, they stop working and grease passes straight into the plenum.
