Out of sight, still fuel
Grease ducts run through ceilings and chases. Grease that condenses inside them can harden into a thick layer that nobody sees until there is a problem. If a cooking fire reaches the exhaust, that grease can carry the fire through the building.
Where grease collects
Horizontal runs, low points, elbows, and the area just before the fan typically hold the most grease.
Access is part of cleaning
Ducts can only be cleaned where they can be reached. Access panels allow crews to clean long runs. When a section cannot be reached, it should be documented rather than assumed clean.
